Aleš Kovář is a small winemaker from the Znojmo region. Not that he is small in size, but rather his wines are made in small batches. The terroir together with the conditions of the given year make it stand out. It cultivates 50-year-old plantings, on which traditional varieties such as Müller Thurgau, Ryzlink Rýnský, Ryzlink Vlašský or Veltlínské zelené appear. In the cellar, he does not add anything to the wine, he lets it flow freely. Most of his wines mature for at least a year in wooden barrels on yeast, then spend some time in bottles.
