Didier Grappe
In 2001, the charismatic Didier Grappe graduated from Beaune's viticulture lycée. This year he started tending the family vineyards. Today he works on 4 hectares in the heart of the village of St.Lothain (mostly Savagnin, Chardonnay, to a lesser extent Pinot Noir, Trousseau, Poulsard). The Novelin, Champs rouge and Longefin vineyards are situated around the village. From the very beginning, Didier accepted his role as a winemaker with humility and respect, he decided for non-violent cultivation of vines (strict green work, shallow manual ploughing, weeding of the vineyards and the use of herbal infusions to strengthen the vineyard, harvesting of low yields, etc.).In the cellar, the winemaker manages without the intervention of the so-called non-manipulative, does not use any additives or yeast (enzymes, artificial acids, etc.). Finished wines are not decanted or filtered, bottled without the use of SO2.
